Eggs, Poached, with Madeira Sauce

Poach the required number of eggs, trim them neatly, and lay them on slices of fried bacon. Garnish round with small forcemeat balls, and pour over them a quarter of a pint of Madeira sauce. (See MADEIRA SAUCE.)
