Fruit, to Bottle, with Sugar
Procure the fruit dry and sound, and drop it gently into bottles (those with wide mouths and glass stoppers are the best); put the bottles in a kettle of water, but do not wet the corks; let them stay till the fruits are ready to burst, then put in the corks, and wax them over to exclude the air. The bottles must be kept in a dry place. Gooseberries, plums, currants, can all be done in this way.
This is a nineteenth-century bottling method, and it fails on every point that modern preserving depends on. The problems are in the seal and in the complete absence of measurement.
- No temperature, no timeThe only doneness cue given is that the fruit is "ready to burst" — a visual guess that tells you nothing about the temperature reached at the centre of the jar. Safe fruit bottling is defined by a measured processing time at a known water temperature for a known jar size, and neither is present here.
- Cork and wax is not a sealCork is porous and wax shrinks and cracks as it cools and as the bottle is moved. This produces a cover, not a vacuum seal, so air and mould spores can work their way back in during storage. The instruction to keep the bottles in a dry place suggests the closure was not relied on to be airtight.
- The corks go in hot and unsterilisedCorks kept deliberately dry above the waterline are never heated, so anything living on them is pressed directly onto the surface of the hot fruit at the moment of sealing. Modern practice sterilises the closure along with the jar.
- Bottles in a bare kettleThe recipe specifies no rack, so the glass presumably stands directly on the metal bottom of the kettle, with the necks held clear of the water. That heats unevenly and risks thermal shock and cracking. Water-bath canning submerges jars fully and racks them off the base for a reason.
- The title promises sugar the recipe never mentionsCassell's heads this "with Sugar" but gives no syrup, no quantity and no point at which sugar is added. Whatever the intended proportion was, it is missing, which leaves the recipe incomplete as well as unsafe.
- Spoilage you cannot always seeGooseberries, currants and plums are acid fruits, so the classic hazard is yeast and mould rather than botulism — but a fermenting or mouldy bottle sealed under wax can build pressure, and surface mould in low-oxygen fruit is not reliably harmless. If you want to bottle summer fruit, use a current tested water-bath recipe with stated jar sizes and processing times.
Bottling fruit by heating it in its own juice inside a corked bottle is the domestic descendant of Nicolas Appert's work in France in the early 1800s, which established that food sealed in glass and heated would keep — decades before anyone understood why. Appert himself used wired-down corks and sealing wax, and British household manuals copied that closure long after the screw-band and rubber-ringed jars of the later nineteenth century had made it obsolete.
