Gooseberry Jelly, Green
Cut off the tops and stalks from some ripe gooseberries. Put them into a preserving-pan, with three-quarters of a pint of water to every pound of fruit, and simmer gently until they are well broken. Strain through a jelly-bag, without squeezing the fruit. Weigh the juice, and boil it rapidly for a quarter of an hour. Mix with it an equal weight of loaf sugar, and boil together until it will stiffen. Skim carefully, and pour into jars. Probable cost, 9d. per half-pound jar. Sufficient, a pound of gooseberries will give on an average nearly three-quarters of a pint of jelly.
A plain two-ingredient jelly that depends entirely on the fruit's own pectin, so the details of straining and boiling are what decide whether it sets.
- Do not squeeze the bagThis is the hinge. Forcing pulp through the jelly-bag clouds the jelly permanently and no amount of skimming will clear it. Let it drip for several hours or overnight.
- "Green" versus "ripe"The title says green and the text says ripe. Hard, underripe green gooseberries carry more pectin and acid than soft, fully ripe fruit, which may be what the title intends, though the recipe as written calls for ripe berries.
- Three-quarters of a pintImperial measure, so 15 fl oz (about 1 3/4 US cups) of water per pound of fruit. The yield note works out at roughly 15 fl oz of finished jelly per pound of gooseberries.
- Loaf sugarA cone or block of refined white sugar, broken up and crushed before use. Ordinary granulated sugar is the direct equivalent; there is no need for jam sugar, as gooseberries supply their own pectin.
- Weigh the juiceEqual weight of sugar to juice means weighing, not measuring by volume. A pint of gooseberry juice weighs roughly 20 oz, so the sugar quantity is noticeably more than a volume-for-volume reading would suggest.
- "Until it will stiffen"Setting point is 220F on a sugar thermometer, or a spoonful chilled on a cold saucer that wrinkles when pushed. The second boil is usually short once sugar is in, often under ten minutes; overboiling turns the jelly dark and sticky.
- Preserving-panA wide, heavy pan with plenty of headroom. Surface area matters as much as depth, since evaporation is what concentrates the jelly, and boiling sugar climbs the sides.
- Jars and keepingThe recipe says only to pour into jars; modern practice is hot, sterilised jars sealed at once. Equal weights of sugar and juice puts the finished jelly at about the sugar concentration needed to keep, and a warm jar prevents cracking while a hot fill helps the seal.
- Cost noteThe 9d. per half-pound jar is the book's own estimate of what the preserve cost to make.
Gooseberries were a British obsession in the nineteenth century, with gooseberry clubs in the industrial north competing to grow the largest fruit and hundreds of named varieties in circulation, few of which survive. Because the fruit is naturally high in both pectin and acid, it sets more reliably than almost anything else in the kitchen garden, which is why gooseberry jelly appears in household manuals as a beginner's preserve and why it is sometimes said to have been used to stiffen jams made from weaker-setting fruit. The point of the entry is the method: the same sequence of simmer, drip, weigh and boil.
