Lamb, Boned, Shoulder Of

Take the bone from the lamb and lay the shoulder flat on the table; sprinkle plentifully with chopped mint, parsley, thyme, and pepper; then roll up and tie firmly, bake in a moderate oven for three hours, and serve with brown gravy. Probable cost, 10d. per pound.
