Peas, Green, Bottled
Shell the peas, put them into dry wide-mouthed bottles, and shake them together so that they may lie in as little space as possible. Cork the bottles closely, and seal the corks. Bury the bottles in the driest part of the garden, and take them up as they are wanted. They will keep good five or six months.
This is a nineteenth-century garden storage trick, not a canning method, and it fails on every point that modern food safety rests on. The reasons are worth understanding because they explain why heat processing exists at all.
- No heat is ever appliedThe peas go into the bottles raw and stay raw until they are dug up months later. Nothing in the procedure kills or inhibits the organisms already on the pods and seeds.
- An anaerobic, low-acid environmentCorked and sealed bottles of green peas approach the conditions Clostridium botulinum spores need: little or no oxygen, a pH well above 4.6, and moisture from the peas themselves. A cork-and-wax closure is not gas-tight, but conditions inside such a bottle can still turn anaerobic. Soil is also the organism's natural home, so contamination of the corks and glass is likely.
- Botulinum toxin is invisibleThe toxin produces no reliable smell, no gas in every case, and no change in appearance. "They will keep good five or six months" can only be a judgement on how the peas looked and smelled on opening, not on whether they were safe.
- Soil burial is not refrigerationThe intent is a cool, stable temperature, but garden soil in summer sits comfortably in the range where mesophilic bacteria multiply. A "dry part of the garden" does nothing to dry the peas.
- Cork and wax are not a sealCorks breathe, shrink and can be pushed out by fermentation pressure. In an unheated buried bottle like this one, a sound result would owe more to chance than to the closure.
- If you want preserved peasFreezing after a brief blanch is the domestic method that works. Anyone set on jars should follow a current pressure-canning schedule from a tested source, since low-acid vegetables cannot be safely processed in a boiling-water bath at all.
Before commercial canning became cheap, keeping green peas past midsummer was a recurring preoccupation of the English kitchen garden, and cookery books carried a range of attempts: peas dried on trays, peas packed in salt, peas sealed in bottles and set in a copper of boiling water, and peas simply buried, as here. The burial method traded on the fact that soil holds a steadier and cooler temperature than a larder, the same logic behind the clamp of potatoes and root vegetables. Nicolas Appert's heat-and-seal process, published in 1810, is the technique that eventually made all of this obsolete, though its adoption in domestic kitchens was slow and books of this kind went on reprinting older wrinkles alongside it. What the entry really records is a period in which the difference between food that had spoiled visibly and food that had become dangerous invisibly was not yet understood.
