Sole, Lemon
Lemon soles are an inferior kind of soles, but are not to be despised. One skin is darker than the other, but not black like a sole proper. To be in perfection they must be fresh, and although they may be prepared in any of the ways given for sole, they are very nice cooked plainly, with both the skins left on. Probable price, 4d. to 8d. per pound.
