Sugar for Jams
Cane loaf sugar is the best; but for jam for immediate use moist sugar answers the purpose. Loaf sugar should be broken into small lumps in order that it may dissolve speedily, but it should not be powdered. The scum may be drained through a coarse muslin laid over a hair sieve, and the clear part that runs off may be put back in the pan.
