Cold Process Jelly
Mix thoroughly in small pan (standing in boiling water) 14 cups any fruit juice (fresh or bottled) and ½ bottle CERTO. Add 3 d level cups sugar. Stir rapidly until sugar is dissolved and pour into glasses. Keep in cold place. Use within a month.
An uncooked jelly that relies entirely on commercial liquid pectin and a high sugar concentration to set. Nothing is boiled, so the flavour stays bright, but the result is a refrigerator jelly rather than a shelf-stable preserve.
- What Certo isCerto is a brand of liquid pectin, sold in the period in a bottle whose stated size varied between printings, so "half a bottle" cannot be converted to a modern pouch with confidence. Powdered pectin is not interchangeable here, and cannot be used cold with the fruit — it must be dissolved and boiled with the fruit.
- The pan in boiling waterThe small pan set in boiling water acts as a makeshift double boiler. Its job is simply to warm the juice so the sugar dissolves quickly; the recipe gives no temperature, and the mixture is never brought to a boil itself.
- Dissolve the sugar completelyThis is the hinge. The recipe asks for rapid stirring until the sugar is dissolved; sugar still gritty when the jelly is poured is likely to mean a poor set. No stirring time is given.
- ProportionsThe numbers as printed do not read cleanly. Cold-process jellies of this type generally run in the region of 1¾ cups juice to 3¼ cups sugar per half bottle of pectin; treat the printed figures with caution and follow the ratio given on a current pectin insert.
Certo belongs to the moment when pectin left the kitchen and became a bought ingredient. Before commercial extracts, jelly makers relied on the natural pectin in underripe apples, currants and quince, and on long boiling to concentrate it; liquid pectin, generally traced to the Douglas Packing Company (later the Douglas Pectin Corporation) of Rochester, New York, around the 1910s, made it possible to set any juice at all, including low-pectin fruits like strawberry and peach. The cold-process method, needing no boiling at all, was the most striking demonstration of what the product could do, and it also spared the cook a hot stove in high summer, when the fruit was in.
