Anchovy Salad

Wash and remove bones, heads, fins, and tails of 6 anchovies. Cut into inch pieces. Put into bowl with lettuce, shredded small; a few small onions, 1 saltspoonful of chopped parsley, and a few slices of lemon. Mix the juice of a lemon with olive-oil. Pour over salad, and serve.

For the Modern Kitchen

A plain oil-and-lemon salad built on whole salted anchovies, which the original cook bought loose from a keg rather than filleted in a tin. The only real work is in the fish.
