Chicken Gumbo with Oysters

Strain the liquor from one quart of oysters, scald and skim it, and add to the soup with the vegetables. Pick the oysters over and rinse them in cold water, and put them in the boiling soup just before serving, giving them time to plump, and serve immediately, without the rice or rice balls.

For the Modern Kitchen

What survives here is the oyster finish for a chicken gumbo: the shellfish liquor goes into the pot with the vegetables, the oysters themselves only at the very end. The timing of that last step is the whole point.
