Cream Caramels

2 cupfuls sugar, 1 cupful of milk or cream; flavor with vanilla to taste. Cook sugar and milk until the mixture forms a soft ball in cold water. Take from the fire, add the vanilla, and beat until creamy. Set to cool and cut in squares.

For the Modern Kitchen

Despite the name, this is a fudge rather than a chewy caramel: there is no butter, no corn syrup and no browned sugar. Treated as fudge it works well, and the whole thing hinges on when you start beating.
