Cream Sauce

Bring 2/3 pint cream slowly to boil; set in stewpan boiling water; when it reaches boiling-point add sugar, then pour slowly on whipped whites of 2 eggs in bowl; add 1 teaspoonful extract vanilla, and use.

For the Modern Kitchen

A hot foamy pudding sauce in the sabayon family, thickened by air rather than starch or yolk. The whole thing hangs on pouring the cream onto the whites in a thin stream while whisking, so the foam warms without collapsing or scrambling.
