Creamed Beets

Use the small white beets; cook in boiling water until tender; put them in cold water and rub off the skins; put them in a saucepan and pour over them a rich cream sauce; let them heat thoroughly, and serve in a hot dish.

For the Modern Kitchen

A plain treatment that depends almost entirely on the sauce, since the beets bring only sweetness and moisture. Two details in the original text carry the whole dish: small beets, and thorough draining before the cream goes on.
