Egg Soup

Heat a quart of milk in a double boiler into which has been stirred a minced onion and a pinch of soda. Rub a tablespoonful each of butter and flour to a paste, and stir into the milk. Season to taste with pepper and salt. Poach 6 eggs and lay them in the bottom of the tureen, and when the soup is smooth and creamy, pour it carefully upon the eggs.

A milk soup thickened with a butter-and-flour paste, poured over poached eggs at the table. Simple, but the order of operations matters more than the ingredient list suggests.
