Fried Egg-Plant

Wipe the egg-plant, cut in 1/4-inch slices, soak in salted cold water one hour. Dip each slice in beaten egg and fry in butter until the inside is very soft and the outside brown.

For the Modern Kitchen

A plain pan-fry with no crumb coating -- the egg alone forms the crust, so the pan and the heat matter more than usual.
