Frozen Tomato Salad

Strain 1 quart of cooked tomatoes and season with salt, paprika, sugar, nutmeg, and a little grated lemon peel. Freeze until firm in apple-shaped moulds. Cover with mayonnaise dressing, and serve at once.

For the Modern Kitchen

A savoury tomato ice served as a salad course, typical of early twentieth-century entertaining. The original gives no quantities for the seasonings and no freezing time, so the notes below fill in what a modern cook needs.
