Ice-Cream Mask

Lady fingers laid over mould; join with royal icing put through tube; when firm slip over brick of ice cream, placed on dish ready to serve. Fruit parfait might be attractively served under this mask.

For the Modern Kitchen Do not make this as written.

This is an assembly instruction rather than a formula: a shell of lady fingers cemented with royal icing, built over a mould and then lowered like a lid over a brick of ice cream at the table. The hinge is that the icing must be fully hard before you attempt to move the shell.
