Maple Sugar Frosting

Boil 1/2 pound broken maple sugar with 3 tablespoonfuls water till dissolved and thick enough to rope when dropped from fork. Pour gradually on whipped whites of 2 eggs. Beat till thick enough to spread.

For the Modern Kitchen

This is a classic boiled or seven-minute frosting with maple sugar standing in for white sugar. Everything depends on the syrup stage, so a thermometer is worth more here than any amount of watching the fork.
