Russian Punch Tart

Bake loaf of sponge cake. Flavor with arrack; remove centre, and crumble. Thin crab-apple jelly with a little brandy; add crumbs; cake-shell; cover with icing flavored with almonds; decorate with walnuts and cherries, pineapple, orange, and other candied fruits.

For the Modern Kitchen

A shorthand entry that assumes you already know how to build a filled cake shell. The method is simple: hollow a sponge loaf, soak the crumbs in spiked jelly, pack them back in, and ice the whole thing over.
