Salmon Mayonnaise (Boil or eggs hard then peel)

Boil 7 or 8 eggs hard, then peel them and lay them on ice. Rub 5 pieces of canned salmon into 1 cupful of mayonnaise. Line the salad bowl with lettuce leaves, arrange the sliced eggs on the leaves and pour over them the salmon mayonnaise. Save some of the eggs to garnish with.

A cold composed salad of the kind that filled sideboards at luncheons and church suppers, built on two things a household could keep on hand: hard-boiled eggs and a tin of salmon. The only real difficulty is the vague salmon measurement.
