Spinach as Greens

Boil spinach as for other recipes. Drain and press out water, return to saucepan, add butter, pepper, and salt, 1 tablespoonful of vinegar, and serve with boiled meat.

The leaves of young beets or turnip tops may be substituted for spinach, or greens, and are frequently used when spinach is out of season.
