Strawberry Cups

Freeze a strawberry ice; then line cups with it, forming wells in centre; pack in the ice cave for about two hours; unmould and fill centres with berries, topping them with whipped cream. Other fruits might be used.

For the Modern Kitchen

A frozen shell of strawberry water ice lining small moulds, filled at the last minute with fresh berries and cream. The whole trick is keeping the lining hard enough to hold its shape while you work.
