Surprise Melon

Mark small melon into vandykes--so as to form a cover--remove seeds and fibre; fill cavity with either ice cream or whipped cream; mix with chopped fruit. Replace lid, and pin bow on top.

For the Modern Kitchen

A serving conceit rather than a cooked dish: a small melon hollowed out, cut with a zigzag rim, and filled with ice cream or cream and fruit. Everything depends on the melon being cold and dry before it is filled.
