Swiss Cabbage

Remove the centre and fill with sausage-meat. Place a layer of the same between the leaves; tie securely in cheesecloth, and boil until the vegetable is tender. Pour over a cupful of hot vinegar.

For the Modern Kitchen

A whole head of cabbage rebuilt around sausage-meat, boiled in a cloth and served with hot vinegar. The method is sound but the original assumes you already know how a stuffed cabbage is assembled, so the working details are worth spelling out.
