Vegetable Cutlets

Cut into bits cooked cauliflower, carrots, celery or asparagus tips to measure 1 pint; add 1 cupful thick, seasoned white sauce; when cool, form into cutlets; add egg, bread, and fry in deep fat; garnish with pimolas and olives, paper frills; serve with green buttered peas.

A croquette in cutlet shape: cooked vegetables bound in a stiff white sauce, chilled, crumbed and deep-fried. The recipe assumes a cook who already knows croquette technique, so the two things it leaves out are the two things that decide whether it works.
