Asparagus Sauce

1 pint liquid, part milk, and part water in which asparagus was cooked 1/4 cup flour 2 tablespoons oil or butter substitute 1 teaspoon salt Asparagus tips Stir flour smooth with part of the milk. Heat remainder of the milk and water to boiling, stir flour mixture into it, and cook till thickened. Add butter, salt, and some asparagus tips cut into small pieces.

For the Modern Kitchen

A plain white sauce built on asparagus cooking water rather than all milk, thickened heavily and stretched with the tips. As written it makes a thick pouring sauce; loosen it with more of the cooking liquid if you want it soup-like.
