Peach Marmalade

Use the same proportions as in the preceding. Cook the fruit and water until the fruit is soft. Put through a colander and add the sugar and lemon-juice. Cook below boiling-point until the marmalade will stiffen upon cooling in a dish. Put into glasses same as the preserves.
