Belgian Christmas Cookies

1 1/2 cups brown sugar 1 cup shortening 2 eggs, well beaten 1 tablespoon boiling water 1/2 teaspoon vanilla 3 1/2 cups flour 1/2 teaspoon soda 1/2 lb. almonds, blanched Cream shortening and sugar together, add other ingredients in order given, sifting flour and soda together. Chill and roll 1/4-in. thick, cut and bake on greased cookie sheet in hot oven until brown. This makes 60 2 1/2-in. cookies.

A thin rolled almond cookie with brown sugar as the only sweetener. The dough is stiff and needs real chilling before it will roll cleanly at a quarter inch.
