2 cups cooked chestnuts 1 cup dry bread crumbs 1/2 cup hot water 1 teaspoon minced parsley 1 teaspoon grated lemon rind 1/3 cup melted shortening 2 teaspoons salt 1/4 teaspoon pepper Boil chestnuts and while hot put through ricer or mash. Mix crumbs and hot water, let stand for a few minutes. Mix all ingredients and put into turkey.

For the Modern Kitchen

A plain, old-style chestnut dressing that leans entirely on the chestnuts for body — there is no onion, no celery, no egg. The whole job is getting the chestnuts peeled and cooked soft enough to rice.
