Corned Beef with Boiled Potatoes

Rinse corned beef in cold water, tie it in shape, put in kettle and cover with cold water. Bring to boil, then simmer until tender, allowing 3/4 hours per pound of meat. When almost done, remove some of the water and cook the pared potatoes in with the corned beef.

For the Modern Kitchen

A plain boiled dinner from a weekly menu plan, written for cooks who already knew what corned beef was. A few things need translating for a modern kitchen.
