Creamed Eggs on Toast

Make a rich white sauce, seasoning it highly with salt, pepper, paprika and minced parsley or chopped chives. Hard-cook several eggs, allowing 2 1/2 eggs per serving. Cut them in crosswise slices into the white sauce, heat thoroughly and serve on toast.

For the Modern Kitchen

A one-paragraph recipe that assumes you already know how to make a white sauce. The only real decisions are its thickness and how gently you treat the egg slices once they are in the pan.
