Creamed Potatoes

Make a rich white sauce. To it add diced potatoes previously cooked. Two cups white sauce to about 6 or 8 medium-sized potatoes make about right proportion. Add 2 tablespoons minced parsley, and season to taste.

For the Modern Kitchen

A skeleton recipe of the kind that assumes the cook already knows how to make white sauce. The proportions given are generous with potato and light on sauce, so the dish comes out coated rather than swimming.
