Creamy Hard Sauce

1/3 cup butter 1/8 teaspoon salt 7/8 cup confectioners' sugar 1/4 teaspoon hot water 1/2 teaspoon vanilla 1/8 teaspoon lemon 1/2 cup cream, whipped Cream butter well, add salt and sifted sugar gradually. Add hot water and flavorings and beat well. Fold this into whipped cream.

A hard sauce lightened with whipped cream, meant for hot steamed puddings. The only real technique is temperature control: everything must stay cold enough for the cream to hold, while the butter must be soft enough to cream smooth.
