Norwegian Cuts

1/2 cup shortening 1/2 cup sugar 3 egg yolks, beaten slightly 1 teaspoon lemon extract 1 cup pastry flour 3 egg whites, beaten very stiff 1/2 cup almonds, chopped Cream shortening and sugar, add yolks of eggs and flavoring. Beat in flour and fold in egg whites; spread about 1/3-in. thick on well greased baking sheet and sprinkle with sugar and almonds. Bake in a moderately hot oven (375 degrees F.) until light yellow. Cut with sharp knife into diamonds or use diamond-shaped cutter. Reduce heat of oven and return to dry for 10 to 15 minutes. Makes 18 cookies.
