Rhubarb Shortcake Filling

2 teaspoons gelatine...1/4 cup cold water 1 cup sugar 2 cups red rhubarb, cut small pieces juice and grated rind 1/2 orange Soak gelatine in cold water. Cook rhubarb, sugar and orange till soft, but not mushy. Add to dissolved gelatine. Fill into shortcake when ready to serve, using it hot or cold as preferred.

A simple stovetop rhubarb compote set lightly with gelatine so it holds between layers of shortcake instead of running out. The whole thing takes about fifteen minutes.
