Turkey Stuffing

2 cups cooked chestnuts 1 cup dry bread crumbs 1/2 cup hot water 1 teaspoon minced parsley 1 teaspoon grated lemon rind 1/3 cup shortening, melted 2 teaspoons salt 1/4 teaspoon pepper Boil chestnuts and drain them. While hot, press through ricer or mash them. Mix crumbs and hot water, let stand few minutes. Then mix all ingredients together, and stuff into the turkey.

A plain chestnut stuffing that leans on the sweetness of the nuts rather than on sausage or herbs. It comes together in minutes once the chestnuts are cooked, which is the only laborious part.
