Vienna Tarts

1/2 cup cottage cheese 1/3 cup shortening 1 1/4 cups flour Mix together with a fork until smooth. Chill well. Roll into thin sheet and cut in 3 inch squares. Drop a spoonful of jelly or sweetened fruit in centre, and press edges to form any shape desired. Bake in a quick oven.

A three-ingredient cheese pastry, closely related to the cream-cheese doughs used for rugelach and kolache. The dough is forgiving, but it must be cold when it goes into a hot oven.
