Buns, Bath

INGREDIENTS for 1 dozen buns.-14 lb. of flour, 4 eggs, 1 oz. of German yeast, 1/4 lb. of butter, 1/4 lb. of sugar, 2 oz. of candied peel, some caraway comfits.

AVERAGE COST, 18.

Dissolve the yeast in 4 tablespoonfuls of water and mix it with the yolks of the eggs, 3 of the whites, and 1/4 lb. of flour.

Beat the mixture in a bowl and set it before the fire to rise. Rub the butter with the flour, add the peel sliced (reserv- BUNS, HOT CROSS. ing a few strips for the tops of the buns, and a few comfits). When the sponge has risen sufficiently, mix all together, and set to rise again with a cloth thrown over.

Form the buns, brush them over with the remaining white of egg, ornament them with the peel and a few comfits, and bake in a quick oven.

TIME to bake, 1/2 hour.
