Baked Halibut Steak

2 pounds halibut steak Butter or other fat I cup milk Pepper and salt Rub steaks well with butter or other fat, pepper and salt. Lay steaks in baking-pan and pour the milk over them. Baste often while cooking, until all the milk is used. Serve with mushroom sauce.

For the Modern Kitchen

A plain oven-baked fish with no temperature and no timing given, as was normal in a period when cooks judged by eye. The whole thing hinges on pulling the halibut before it dries.
