Corn-Meal Muffins

1 cup corn-meal 1 cup flour 1/2 teaspoon salt 4 teaspoons baking-powder 1 cup milk 1 egg 2 tablespoons shortening Mix and sift the corn-meal, flour, salt and baking-powder. Add the milk gradually, then the well-beaten egg, and melted fat. Bake in well-greased muffin-pans in a hot oven (400 degrees-425 degrees F.).

For the Modern Kitchen

A plain, unsweetened cornbread muffin of the kind that was meant to go on the dinner table beside a stew rather than at breakfast. The method is the standard muffin method, and the only things missing from the original are a baking time and a yield.
