Devonshire Cream
(Such as Rhondda Welsh Singer sang about.) Set aside a pan of rich milk, until the cream rises thick on top. Without disturbing the cream, set the pan of milk on the back of the stove, and heat slowly. Scald, but do not boil, until the cream wrinkles. Remove from the stove and cool; then skim off the cream. This is Devonshire Clotted Cream. Use anywhere you would use cream or whipped cream, except in coffee or cocoa.
