Japanese Tea Cake
Mix together, scant 1/2 cup lard and 1 cup sugar. Beat yolks of two eggs and mix with above. Add 4 tbsp. molasses, 2 cups sifted pastry flour, 1 tsp. each of Slade's cinnamon and cloves. This is very stiff; now add 1 cup boiling water into which 1 tsp soda has been dissolved. Beat well; bake in two layers in moderate oven.
Filling:-1 cup raisins and figs put through food chopper; add a little water and simmer. Add 1/2 cup sugar; cook until thick, flavor with vanilla and grated orange rind. Grate orange rind on saucer, cover with sugar and let stand ten or fifteen minutes before adding to filling. Use whites of two eggs for boiled frosting and use 11/2 cups sugar and 1/2 cup boiling water. Cover sides as well as top of cake.
