Baking Powder Biscuit Dough
The secret of making light biscuits is found in four facts: 1. Use Calumet Baking Powder. 2. To "cut in" the shortening. Less air is squeezed or pressed out of sifted mixture as when fingers are used. Also when shortening is melted from heat of fingers, more flour is worked into dough, thus toughening it. 3. To add just enough liquid to make a soft dough, and mix it lightly and just enough to combine the flour and liquid. Handling after that toughens. 4. To have the oven hot enough. If cooked in too slow an oven the gas will escape before it has done its work.
Anyone can make good biscuit dough by following the principles that govern its production: 1st. A very soft dough. 2nd. Very light handling. 3rd. A hot oven. 4th. Calumet Baking Powder. Furthermore, the dough should be kept cool and cold water or cold milk should be used. The hand should come in contact with the dough as little as possible. While kneading is good for yeast bread, it is death to baking powder dough. A stiff baking powder dough worked hard will make poor, soggy biscuits, and conversely, a soft dough handled lightly will make light, palatable ones. 4 cups flour

- The list is incompleteOnly "4 cups flour" survives here. A standard period proportion for that much flour runs to roughly 8 teaspoons baking powder (period recipes, Calumet's included, dose about 2 level teaspoons per cup of flour), 1 to 2 teaspoons salt, 1/2 cup shortening and 1 1/3 to 1 1/2 cups cold milk; use a current biscuit recipe if you want measured amounts rather than guessing at what followed.
- A hot oven means 450FA hot oven -- The page gives no temperature; "hot" in this period is usually read as somewhere around 400-450F. Biscuits of ordinary thickness take about 12 to 15 minutes. The warning about a slow oven follows the reasoning the page itself gives: with too little heat the gas is lost before the crumb sets, and the biscuits stay dense.
- Calumet, then and nowCalumet was a double-acting powder, pairing a fast-acting phosphate acid with sodium aluminum sulfate, which acts mainly once heat and moisture are both present. The brand is still sold, and most modern double-acting powders work on the same delayed principle, though some use different slow acids, which is why a short delay between mixing and baking is not fatal.

Reliable Recipes was published by the Calumet Baking Powder Company of Chicago, whose founding is generally traced to William Wright in 1889, and pages like this one are advertising dressed as instruction — note that the brand appears twice in a four-point list of physical principles. The genre existed because chemical leavening had to be sold as well as explained: American cooks through the nineteenth century leavened quick breads with saleratus or soda plus sour milk, a method that demanded judgment and often left a soapy tang, and manufactured baking powders promised the same speed with predictable results. Calumet's was a double-acting phosphate and sodium aluminum sulfate formula, which is precisely why the copywriter could be so emphatic about a hot oven; the second rise depends on oven heat. What is striking is how little the technique has moved. The familiar advice — cold fat, soft dough, minimal handling, hot oven — is still what biscuit recipes tend to say.
