Beets
Are most acceptable sliced in vinegar and served cold. Cooked of course till tender, though we find French directions for putting beets in jars of vinegar with carraway and coriander seeds, without saying whether cooked or raw. Beets are used in Poland, Hungary and thereabouts, fermented and in many other ways that would seem very outlandish and perhaps disgusting to Americans.
