Rabbit Pie

After the rabbits have been thoroughly cleaned and washed, divide into conveniently sized pieces, cutting each back into three parts. Immerse in salted water for a half hour, remove, wipe dry, and then rub with lemon juice, salt and pepper. In case the rabbit is very plump, gash the thickest part several times allowing the seasoning to penetrate. Proceed as in game pie.
