What to Do with Left-Over Fish
Fish, like meat, is particularly attractive to flies, therefore any cooked remnants should be carefully screened while cooling, and never placed in contact with butter or milk in the ice-box. It should be reheated within twenty-four hours of the first cooking. Like tender meat, the fiber of fish is hardened by continuous high heat, therefore great care should be taken in reheating it.
