Canned Pears
Prepare and can precisely like peaches in preceding recipe, except that they require longer cooking. When done they are easily pierced with a silver fork.
This is a cross-reference rather than a standalone method: it sends you back to the preceding peach recipe and adds only that pears take longer. Read as a piece of nineteenth-century domestic practice it is clear enough, but it is not a canning procedure that meets any current standard, and the points below explain where it falls short.
- No processing time or temperature anywhereThe instruction to cook until the fruit is "easily pierced with a silver fork" measures tenderness, not safety. Nothing in the recipe specifies how long filled, sealed jars are held at what temperature, which is the only thing that determines whether a jar is safely preserved.
- This is open-kettle canningThis appears to be open-kettle canning — the preceding peach recipe is not reproduced here, but the period method it points back to (cook the fruit in syrup, ladle into hot jars, seal, and let the vacuum form as the jar cools) was standard and has been rejected for decades: the seal is unreliable, headspace air is never driven out, and the contents are exposed to recontamination between kettle and lid.
- Pears sit close to the acidity lineMost European pears fall in the acid range, but ripe fruit varies and some pears, notably nearly all Asian pears, test above pH 4.6, the threshold above which Clostridium botulinum can grow in an anaerobic sealed jar. Current tested procedures call for measured acidification of Asian pears for this reason.
- Botulism gives no warningUnlike mould or yeast spoilage, which announces itself, botulinum toxin in a sealed jar of fruit produces no reliable smell, no bulge you can count on and no off flavour. A jar that looks perfect can be dangerous, which is why the process rather than the appearance has to be trusted.
- Period closures no longer existThe peach recipe this one depends on is not quoted here, but a jar of this period would have been a glass-lidded jar with a rubber ring and wire bail, or a zinc screw cap. Modern two-piece lids seal and vent differently, so following the original with today's hardware would not reproduce what the author expected.
- The silver forkSilver was presumably specified because iron and steel discoloured light fruit; this is a period convention rather than a safety instruction, and the only part of the recipe that translates directly: any thin tester will tell you when a pear half is tender.
- If you want to can pearsUse a current tested procedure with weighed quantities, a measured acidifier and a stated processing time for your jar size and altitude. Do not adapt this text.
The Dixie Cook Book belongs to the great age of household canning that opened after John Landis Mason's 1858 screw-top jar patent put reliable glass closures in reach of ordinary kitchens, and by the 1880s a Southern cookbook without a canning chapter would have been thought incomplete. Pears were a natural candidate: hard-fleshed hybrids such as the Kieffer and LeConte, planted in the South in this period partly for their resistance to fire blight, were poor eating raw and were largely cooked or put up in syrup — which is why this recipe stresses longer cooking than peaches without ever quite explaining that pear flesh is simply denser. The terseness is characteristic of the genre, and the crucial variables of time and heat went unrecorded. It took the extension services and university food-science laboratories of the following century to work out what those variables actually were, and to establish that the sealed jar itself, rather than the boiling kettle, was where the risk lived.
