Canned Peaches
Pare, halve and seed; make a syrup of a pint granulated sugar to a quart water, place on stove in a porcelain kettle (enough for two quart cans). When syrup boils, drop in enough fruit for one can; watch closely, testing with a silver fork, so that the moment they are done they may be removed. When the peaches are tender, lift very gently with a wire spoon, and place in the can previously heated, according to instructions for preparing glass cans. When full of peaches pour in the hot syrup, place the cover on and seal at once; then add more peaches to the hot syrup for next can, and repeat the operation. If there are more peaches than will fill the can, place them in another can and keep hot until more are ready, and so on until all are canned. Skim the syrup before adding peaches, making only enough syrup at one time for two cans.— Mrs. W. W. W.
This is open-kettle canning: hot fruit into a hot jar, lid on, no processing afterward. That method was standard for decades and is no longer considered safe, so the notes below explain the method rather than adapt it.
- The missing stepNothing in this procedure heats the sealed jar. The fruit and syrup are hot when they go in, but the jar rim, the lid and the headspace air are not reliably sterilised, and the vacuum that forms as the jar cools is not a guarantee of a sound seal. Current practice requires filled, capped jars to be processed in a boiling-water canner for a measured time based on jar size and altitude.
- Why peaches are not exemptPeaches are high-acid enough that Clostridium botulinum is not the primary worry, but yeasts, and especially moulds, grow readily in an underprocessed jar. Mould growth raises the pH of the fruit over time, which is precisely how a high-acid pack stops being one. Spoilage in an open-kettle jar can also be invisible until the jar is opened.
- Seal failure is the common outcomeSeal failure is a common outcome -- fruit sealed without any processing can develop a weak or false seal that appears to hold and then lifts weeks later in storage. Unsealed jars were one of the reasons the method was dropped from official guidance.
- The cans in question"Cans" here means glass jars with a screw band or a wire bail and a rubber ring, not tin; the recipe itself refers to "instructions for preparing glass cans." Heating the jars first would at least have kept them from cracking when the boiling syrup went in. Zinc lids and rubber rings of this era are not usable equipment today.
- The syrup ratioA pint of sugar to a quart of water is roughly a medium syrup by modern standards, about 2 cups sugar to 4 cups water. Sugar in canned fruit is for flavour, colour and texture only; it does not preserve peaches at this concentration.
- The silver forkSilver and porcelain-lined kettles were specified because iron and copper discolour pale fruit and can give it a metallic taste. Stainless steel does the same job now. The fork test is sound: peaches held past tender collapse in the jar.

The Dixie Cook Book belongs to the family of late nineteenth-century compilations built on the Buckeye Cookery model, in which recipes were gathered from named contributors and initialled — "Mrs. W. W. W." here — so that readers could see a dish had been vouched for by a real household. Home canning in glass was still relatively young when books like this were written: the screw-neck jar with a shoulder seal patented by John Landis Mason in 1858 made domestic fruit preserving practical. Open-kettle canning was the method the books taught because it was fast and used no special equipment beyond the jars, and it persisted in print well into the twentieth century before extension services and the USDA pushed processing times into general use. The care taken here — porcelain kettle, silver fork, wire spoon, skimming between batches — is all about keeping the fruit pale and whole, which was the mark of a well-run pantry.
