Canned Quinces and Apples
Quarter them, and if large, eighth them; cook separately in water to cover till they can be pierced with a (silver) fork; to a quart of the mixed juice take one pint sugar, and when boiling add quinces and apples, half and half, or whatever proportion you wish; cook until of a clear red look, then place in jars; fill with juice, run a silver spoon down the sides of the can to let all air escape; add more juice to overflowing, and seal at once.
This is open-kettle canning: hot fruit ladled into jars and sealed with no further processing. It was standard practice in the 1880s and is no longer considered safe, so the notes below explain the failure points rather than adapting the method.
- Why the method failsSealing hot syrup into a jar and letting it cool draws a partial vacuum, which reads as a good seal, but nothing in the process sterilizes the jar rim, the lid, or the headspace air. Mold and yeast can survive, and the seal itself is unreliable over months of storage. Current guidelines for fruit in syrup call for a measured process after filling -- boiling-water bath or atmospheric steam -- timed to jar size and altitude.
- No headspace, by instructionThe direction to fill "to overflowing" leaves no room for expansion and puts syrup across the sealing surface. Both work directly against a durable seal. Modern fruit packs specify a defined headspace for exactly this reason.
- No processing time or temperature anywhereThe recipe gives no jar size, no boiling time, and no way to judge doneness of the pack other than color. There is nothing here to scale or correct, which is why it should not be attempted as written. Use a current tested recipe for quinces or apples in syrup.
- "Cans" and "jars" both appearIn this period the two words were often used interchangeably for glass canning jars, which appears to be the case here, since the recipe applies both to the same vessel. Such jars closed with a zinc cap and a rubber ring, which does not behave like a modern two-piece lid, and instructions written for them do not transfer.
- The silver fork and spoonNot a flourish. Quince and apple are acidic enough to react with iron and older base-metal cutlery, discoloring the fruit and picking up a metallic taste; silver was the inert utensil a well-equipped kitchen had. Stainless steel now does the same job.
- Syrup proportionOne pint of sugar to one quart of the combined cooking liquid works out to roughly a medium syrup by modern reckoning: sweet enough to taste, but not a preservative at that concentration. It contributes little to shelf stability here.
- The "clear red look"This is real and worth knowing: quince flesh turns from pale cream to deep pink or ruby with long cooking, as its tannins and anthocyanin precursors change under prolonged heat and acid. It is the signal the fruit is fully cooked, and it appears in stewed quince and quince paste as well.
Quinces were a dooryard fruit across the nineteenth-century South and North alike, planted less for eating out of hand — the raw flesh is hard, astringent and barely edible — than for their perfume and their heavy load of pectin, which made them the natural partner for apples in jellies, marmalades and mixed packs like this one. Pairing the two stretched a small quince crop and gave the blander apple both scent and the rose color that long cooking brings out. The Dixie Cook Book belongs to the family of late-century American compilations built largely from contributed household receipts, and its canning chapter predates the boiling-water bath as standard advice: cook the fruit through, pack it hot, seal it fast. The wide gap between that practice and modern tested processing is the clearest measure of how much food preservation changed once bacteriology reached the domestic-science curriculum in the following decades.
