Charles Ranhofer, chef at Delmonico's in New York, published The Epicurean in 1894 as a comprehensive record of the restaurant's repertoire, and its egg chapter runs to dozens of numbered variations on the same handful of methods — this one sits between a Venetian version and one with c u00e8pes. u0152ufs sur le plat is the French kitchen's answer to the fried egg: cooked and served in the same buttered dish, so the eggs arrive still hot rather than sliding around a cold plate.
